It's A Soup Kinda' Day

The weather girl said it was going to rain yesterday...
and guess what, it did.
And I was so prepared, nowhere to go and not too much to do...
I had a half of a rotisserie chicken in the frig, that's a score, that spells a big pot of
I usually make this in the crock pot but I got a late start,
so I made it in my big cast iron Rachel Ray Pot.

The ingredients...

plus the noodles, the best part.

I just soften the vegetables, sweet onion, celery and carrots in extra virgin olive oil...
I always use the top, leafy parts of the celery, there is a lot of flavor in those.

I season each time I add a layer.

Garlic, rosemary and thyme...

chicken stock and 2 bay leaves.
I simmered this for about 2 hours, before adding the cooked, diced, left over rotisserie chicken.

The noodles only need about 10 minutes...

and into these huge soup mugs it goes.
My mug is purple,

the hubs likes burgundy.
We love french bread with this but saltines or oyster crackers are also good.

YuM, this is really good!!

Hello, your soup looks delicious. You lined up your vegetables in a pretty colorful way. I am a big fan of soup, just wish my hubby liked it just as much. It is really cold here this morning, but supposed to warm up later in the week. Happy Tuesday, enjoy your day!

Oh mercy, anyone would "lust for" chicken soup, after seeing/reading this post!!!!!!!!!

And I like it, so I am really "lusting"!!!!!!!!

And your kitchen must have smelled sooooo goooood tooooo! Nothing like a hearty soup, for cooler, rainy weather. :-)

and again, your staged ingredients photos, could be used in one of those home magazines!!!!

My hubby just bought some soup from a can when we went to the store the other day, wanted to be ready for those times that it got cool out. I do make some soup but they are for work I guess.

Oh, my! This looks so good! I use the leafy part of celery too. At last I can say - it's chilly in Texas! We leave for the ranch in the morning and I hope we have some soup weather days while we are down there!

Oh yummmmm ..... Could not have been a more delicious post to read ... -- unless you could figure out how to add the aroma. Or e-mailed me a mugful. Rotisserie chickens are the best deal going when cooking for two aren't they?
